  • 4 salmon fillets (about 6 oz each)
  • Salt and black pepper
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Chopped fresh parsley, for serving
Directions
  • Preheat your oven to 400°F (200°C).
  • Season salmon fillets with salt and black pepper on both sides.
  • In a small bowl, mix brown sugar, olive oil, honey, Dijon mustard, and lemon juice.
  • Brush the fillets with the mix, and let them marinate for 15 minutes.
  • Place the fillets on a lined baking sheet. Roast in the oven for 12-15 minutes or until the salmon flakes easily with a fork.
  • Baste the salmon with the remaining glaze halfway through the cooking time.
  • Plate the salmon and drizzle any remaining glaze over the top. Sprinkle with parsley.
