  • 4 swordfish steaks, about 6 oz each
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 oranges, peeled and diced
  • 1 grapefruit, peeled and diced
  • 1 lime, juiced
  • 1 tbsp honey or maple syrup
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper, to taste
Directions
  • Rinse the swordfish steaks under cold water and pat them dry with paper towels.
  • In a small bowl, mix the olive oil, garlic, thyme, salt, and pepper to create a marinade.
  • Rub the marinade all over the swordfish, covering them evenly. If time allows, let the swordfish marinate in the refrigerator for about 30 minutes to enhance the flavor.
  • Preheat your grill to medium-high heat (about 425°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  • In a medium bowl, combine the oranges, grapefruit, lime juice, honey or maple syrup, and cilantro.Season with salt and pepper to taste. Stir gently to combine. Set aside.
  • Once the grill is to temp, place the swordfish steaks directly onto the grill grates.
  • Grill the swordfish for about 4-5 minutes per side, or until grill marks form and the fish is cooked through. The internal temperature should reach 145°F (63°C), and the flesh should be opaque and flake easily with a fork.
  • Remove the swordfish from the grill and transfer it to a serving platter.
  • Spoon the citrus salsa over the swordfish, allowing the vibrant flavors to complement the smoky, grilled fish. Garnish with additional cilantro leaves, if desired.
  • Serve alongside your favorite side dishes, such as rice or grilled vegetables.
