Ingredients

  • 4 halibut fillets (about 6 oz each)
  • Salt and black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons olive oil
Directions
  • Preheat your oven to 400°F (200°C).
  • Season halibut fillets with salt and black pepper on both sides.
  • In one shallow dish, place beaten eggs. In another dish, combine breadcrumbs, Parmesan cheese, parsley, dill, and chives.
  • Dip each halibut fillet into the eggs, allowing excess to drip off. Press the fillets into the herb-panko mixture, coating them evenly.
  • In an oven-safe skillet, heat olive oil over medium-high heat.
  • Sear the halibut fillets for 2-3 minutes on each side or until golden brown.
  • Transfer the skillet to the oven. Bake for an additional 5-7 minutes or until the halibut is cooked through and flakes easily.
  • Garnish with additional fresh herbs if desired.
