  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded coconut (sweet or unsweet)
  • 1 cup Panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • 1/2 cup sweet chili sauce
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp Sriracha sauce (optional)
Directions
  • Pat the shrimp dry with paper towels to remove excess moisture.
  • In a shallow dish, combine the flour with garlic powder, paprika, salt, and pepper.
  • In another shallow dish, beat the eggs.
  • In a third shallow dish, combine the coconut and breadcrumbs.
  • Dredge each shrimp in the seasoned flour mixture, shaking off any excess.
  • Dip the shrimp into the beaten eggs, allowing any excess to drip off.
  • Coat the shrimp in the coconut and breadcrumb mixture, pressing gently to adhere coating.
  • Place the coated shrimp on a baking sheet lined with parchment paper.
  • In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  • Carefully add the shrimp to the hot oil in batches, making sure not to overcrowd the skillet.
  • Fry the shrimp for 2-3 minutes on each side, or until golden brown and crispy.
  • Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.
  • In a small bowl, whisk together the sweet chili sauce, mayonnaise, lime juice, and Sriracha sauce (if using). Adjust the amount of Sriracha to your desired level of spiciness.
  • Arrange the crispy coconut shrimp on a serving platter.
  • Serve immediately with the prepared dipping sauce on the side.
  • Garnish with lime wedges and chopped cilantro, if desired.
