Ingredients
Serves 4
  • 2 cups cooked rice (preferably day-old)
  • 1/2 lb pork loin or tenderloin
  • 2 eggs, beaten
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed veggies (such as peas, carrots)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • Salt and pepper, to taste
  • Green onions, sliced, for garnish
Directions
  • Cook the rice according to package instructions and allow it to cool completely. Day-old rice works best for fried rice as it's firmer and less sticky.
  • Cut the pork into bite-sized pieces.
  • Beat the eggs in a small bowl and set aside.
  • Mince the garlic, finely chop the onion, and prepare the mixed vegetables if using fresh ones. You can also use frozen mixed vegetables.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the sliced pork to the skillet and stir-fry until it's cooked through and lightly browned. Remove the pork from the skillet and set it aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and chopped onion, and stir-fry until fragrant and the onion is translucent.
  • Add the mixed vegetables to the skillet and stir-fry until they are tender yet crisp.
  • Push the vegetables to one side of the skillet, creating a space to cook the eggs.
  • Pour the eggs into the skillet and allow them to cook undisturbed until they start to set.
  • Use a spatula to scramble the eggs until they are fully cooked but still moist.
  • Add the cooked rice to the skillet, breaking up any clumps with a spatula or wooden spoon.
  • Return the cooked pork to the skillet and toss everything together until well combined.
  • Drizzle the soy sauce and oyster sauce (if using) over the rice mixture, tossing continuously to ensure even distribution.
  • Season the fried rice with salt and pepper to taste. Adjust the seasoning as needed.
  • Continue to stir-fry the pork fried rice for another 2-3 minutes, allowing the flavors to meld and the rice to heat through. Garnish with sliced green onions just before serving.
