  • 1½ pounds of pork tenderloin
  • 8 ounces of thinly sliced pancetta
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 2 sprigs of rosemary
  • 1/4 cup of white wine or chicken broth
Directions
  • Season the pork tenderloin with salt and pepper, ensuring it is evenly coated.
  • Lay out the pancetta on a clean surface. Place the tenderloin on top and wrap it with the pancetta slices, covering the entire surface.
  • In an oven-safe skillet, heat olive oil over medium-high heat. Add the garlic and sear the tenderloin until golden brown on all sides.
  • Tuck the rosemary around the pork, and pour white wine or chicken broth into the skillet.
  • Transfer the skillet to the oven. Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.
  • Baste the pork with the pan juices every 10 minutes for a flavorful finish.
  • Ensure the internal temperature is reached, and the pancetta is crispy. Allow the pork roast to rest for 10 minutes before slicing.
