Ingredients
Serves 4
  • 1 lb boneless pork shoulder, 1" cubes
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 cup chicken broth
  • 1/2 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 8 small flour or corn tortillas
  • Chopped fresh cilantro, diced avocado, and sliced radishes, for serving
Directions
  • Preheat your oven to 325°F (163°C).
  • In a large oven-safe pot, or Dutch oven, heat olive oil over medium-high heat. Brown the pork cubes on all sides.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  • Stir in tomato sauce, cumin, oregano, salt, and black pepper. Mix well.
  • Cover the pot and transfer it to the oven. Braise for 1.5 hours or until the pork is fork-tender.
  • In the last 15 minutes of cooking, warm the tortillas in the oven according to instructions.
  • Once cooked, shred the pork using two forks, incorporating it into the flavorful sauce.
  • Spoon the braised pork onto warm tortillas. Top with cilantro, avocado, and radishes.
