Ingredients
Serves 4
  • 4 bone-in pork chops (about 1 in thick)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • Chopped fresh parsley, for garnish
Directions
  • Preheat your oven to 350°F (175°C).
  • In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Remove chops and set aside.
  • In the same skillet, add onion and garlic. Sauté until softened and fragrant.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  • Stir in tomato sauce, oregano, basil, salt, and black pepper. Mix well.
  • Place the seared pork chops back into the skillet, ensuring they are nestled into the sauce.
  • Transfer the skillet to the preheated oven. Braise for 30-35 minutes or until the pork chops are cooked through and tender.
  • Ensure the internal temperature of the pork chops reaches at least 145°F (63°C).
  • If desired, sprinkle parsley over the pork chops before serving.
