For the lamb:
  • 1 pound ground lamb
  • 1 tbsp olive oil
  • 1 small onion, diced

For the crema:
  • 1 avocado, peeled and pitted
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • Salt and pepper to taste
For serving:
  • 8 small flour or corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced jalapeños (optional)
  • Fresh cilantro, chopped
  • Lime wedges
Directions
  • Heat olive oil in a skillet over medium heat. Once hot, add the onion and garlic. Sauté until the onion becomes translucent and fragrant, stirring occasionally to prevent burning.
  • Add the ground lamb to the skillet and cook until it is browned and cooked through, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.
  • Season the lamb with chili powder, cumin, salt, and pepper, ensuring that the spices are evenly distributed throughout the meat. Continue to cook for another 2-3 minutes.
  • Once the lamb is fully cooked and seasoned, remove the skillet from the heat and set it aside while you prepare the avocado crema and warm the tortillas.
Preparing the Crema
  • In a blender or food processor, combine the avocado, sour cream, lime juice, salt, and pepper. Blend until smooth and creamy, scraping down the sides of the blender as needed to ensure that all ingredients are well incorporated.
  • Taste and adjust the seasoning as needed. Add more lime juice for acidity or salt and pepper for flavor, according to your preference.
Assembling the Tacos
  • Warm the tortillas in a dry skillet or oven until they are soft and pliable.
  • Spread a generous spoonful of the crema onto each tortilla, covering evenly.
  • Spoon the cooked lamb onto the center of each tortilla, distributing it evenly.
