Ingredients

  • 1 pound ground lamb
  • 1 small onion, diced
  • 1 small carrot, peeled and diced
  • 1 small celery stalk, diced
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 1 (28-ounce) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 pound pasta
  • Grated Parmesan cheese, for serving (optional)
Directions
  • In a large skillet, brown the lamb over medium heat, breaking it into crumbles with a spoon.
  • Add onion, carrot, celery, and garlic to the skillet. Sauté until the vegetables are softened.
  • Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
  • Stir in crushed tomatoes and tomato paste. Mix well to combine.
  • Add oregano, basil, salt, and pepper to the sauce. Adjust seasoning to taste.
  • Reduce the heat to low and let the sauce simmer for 20-25 minutes.
  • Meanwhile, cook the pasta according to package instructions until al dente. Drain.
  • Toss the cooked pasta with the lamb Bolognese sauce until well coated.
  • Serve the pasta with grated Parmesan cheese on top, if desired.
