  • 1 (1.5-2 pound) boneless leg of lamb
  • 3 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
Directions
  • In a bowl, mix minced garlic, Dijon mustard, olive oil, chopped rosemary, chopped thyme, chopped parsley, salt, and pepper to create the marinade.
  • Place the leg of lamb in a dish or a resealable plastic bag. Coat the lamb evenly with the herb-crusted marinade, ensuring it's well-covered. Marinate in the refrigerator for 1-2 hours.
  • Preheat your oven to 375°F (190°C).
  • Place the marinated leg of lamb on a roasting rack in a baking dish. Roast in the oven for approximately 1 hour or until it reaches your desired level of doneness. Baste with pan juices occasionally during roasting.
  • Use a meat thermometer to ensure your preferred internal temperature.
  • Allow the lamb to rest for 15 minutes before slicing. This allows the juices to redistribute, keeping the meat moist.
