  • 4 boneless, skinless chicken breasts (thin)
  • 4 whole wheat wraps
  • 1 cup hummus
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup tahini sauce
  • Salt and pepper to taste
  • Olive oil for cooking
Directions
  • Season both sides of the chicken with salt and pepper to taste.
  • Heat a drizzle of olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the seasoned chicken breasts. Cook for approximately 6-8 minutes per side, or until the chicken is golden brown, the internal temperature should reach 165°F (75°C).
  • Once the chicken is cooked through, transfer it to a cutting board and allow it to rest for a few minutes. This allows the juices to redistribute, resulting in juicier chicken.
  • While the chicken is resting, warm the whole wheat wraps in a dry skillet or microwave for 10-15 seconds. Warming the wraps makes them more pliable and prevents tearing.
  • Assemble the wraps by spreading approximately 1/4 cup of hummus evenly onto each wrap, leaving a border around the edges.
  • Slice the rested chicken breasts into thin strips. Divide the sliced chicken evenly among the wraps, placing the strips in a single layer down the center of each wrap.
  • Top the chicken with diced tomatoes and cucumbers, distributing them evenly.
  • Drizzle each wrap with tahini sauce, adding a generous amount for extra flavor.
  • To roll the wraps, fold the bottom edge of each wrap up over the filling, then fold in the sides, and roll tightly from bottom to top, ensuring the filling is securely enclosed.
