  • 4 chicken breasts
  • 2 lemons, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Chopped parsley, for garnish (optional)
Directions
  • In a bowl, whisk together lemon juice, olive oil, mustard, honey, garlic, salt, and pepper.
  • Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring it's well-coated. Marinate in the refrigerator for at least 30 minutes, allowing the flavors to infuse.
  • Preheat your oven to 375°F (190°C).
  • Remove the chicken from the marinade, letting any excess drip off. Place in a baking dish.
  • Bake in the oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • During baking, spoon some of the reserved marinade over the chicken breasts occasionally to enhance flavor and moisture.
  • Once baked, let the chicken rest for a few minutes before serving. Optionally, garnish with chopped parsley for freshness.
