Chicken Stir-Fry
Chicken stir-fry is a quick and easy Asian-inspired dish that combines sliced chicken with a variety of vegetables, a savory sauce, and rice or noodles. This dish is a healthy and flavorful way to incorporate more vegetables and lean protein into your diet. It's also a versatile recipe, as you can easily switch up the vegetables or sauce to suit your taste preferences.

Ingredients
Serves 4
  • 1 lb boneless, skinless breasts, thin strip slices
  • 3 tbsp vegetable oil
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 onion, sliced into thin strips
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, sliced
  • Cooked rice or noodles, for serving
Directions
  • In a small bowl, whisk together soy sauce, cornstarch, brown sugar, salt, and black pepper.
  • Heat 2 tbsp of vegetable oil in a large skillet or wok over high heat. Add chicken and stir-fry for 3-4 minutes or until browned and cooked through.
  • Remove chicken from the skillet and set aside.
  • Add the remaining tablespoon of vegetable oil to the skillet. Add the bell peppers and onion and stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
  • Add garlic and ginger to the skillet and stir-fry for 30 seconds.
  • Add the chicken back into the skillet, along with the soy sauce mixture. Stir-fry for an additional 2-3 minutes, or until the sauce has thickened and everything is well coated.
  • Garnish with green onions and serve hot over cooked rice or noodles.
