  • 4 chicken breasts
  • Salt and black pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup lemon juice
  • 2 tablespoons capers, drained
  • Chopped fresh parsley, for serving
Directions
  • Season chicken with salt and black pepper. Dredge each piece in flour, shaking off excess.
  • In a large skillet, heat butter and olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides and cooked through (about 5-7 minutes per side).
  • Remove chicken from the skillet and set aside.
  • Pour chicken broth, white wine, and lemon juice into the skillet. Scrape up any browned bits from the bottom of the pan.
  • Stir in drained capers and let the sauce simmer for a few minutes to reduce and thicken.
  • Return the cooked chicken breasts to the skillet, allowing them to heat through and absorb some of the flavorful sauce.
  • Arrange the chicken on serving plates, spoon the caper and lemon sauce over the top.
  • Garnish with chopped fresh parsley and serve the lemon chicken piccata with your favorite side dishes, such as pasta or steamed vegetables.
