  • 4 boneless chicken breast halves
  • Salt and black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup Marsala wine
  • 2 tablespoons butter
  • Chopped fresh parsley, for serving
Directions
  • Pound thin the chicken breasts and season with salt and pepper.
  • Dredge each piece in flour, shaking off excess.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides and cooked through (about 5-7 minutes per side). Remove chicken from the skillet and set aside.
  • In the same skillet, add sliced cremini mushrooms and diced onion. Sauté until the mushrooms are browned, and the onion is softened.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Pour in Marsala wine to deglaze the pan, scraping up any browned bits from the bottom.
  • Add chicken broth, bringing the mixture to a simmer. Let it cook for a few minutes to reduce.
  • Stir in butter to enrich the sauce and add a luxurious finish.
  • Return the chicken to the skillet, allowing it to heat through and absorb the flavors.
  • Plate and sprinkle chopped fresh parsley over the top.
