Chicken Enchiladas
Chicken enchiladas are a Mexican-style dish made with soft tortillas filled with shredded chicken and cheese, and then rolled up and baked in a flavorful sauce. The enchiladas are typically topped with additional cheese, salsa, and other toppings such as sour cream and chopped tomatoes. They are a popular and delicious dish that is perfect for a casual dinner.

Ingredients
Serves 4
  • 1 pound chicken breasts
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 1 small bell pepper, diced
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup salsa
  • 1 cup shredded cheese, such as cheddar or Monterey Jack
  • 8 small flour tortillas
  • Chopped fresh cilantro and diced avocado, for serving (optional)
Directions
  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, cook the chicken breasts until fully cooked. Shred the chicken using two forks and set aside.
  • In the same skillet, heat vegetable oil. Add diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
  • Stir in ground cumin, chili powder, salt, and black pepper.
  • Add the shredded chicken back to the skillet and mix well.
  • Spoon a portion of the chicken mixture onto each flour tortilla. Roll them up and place them seam-side down in a baking dish.
  • Pour salsa over the rolled tortillas, spreading it evenly. Sprinkle shredded cheese on top.
  • Bake in the preheated oven for about 20-25 minutes or until the cheese is melted.
  • Remove from the oven. If desired, garnish with cilantro and diced avocado.
