Ingredients

  • 1 lb boneless, skinless breasts, cut to bite-size
  • 6 cups chicken broth
  • 2 cups water
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and pepper to taste
  • 2 bay leaves
  • 2 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 1/2 cup milk
For the dumplings:
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
Directions
  • In a large pot, combine chicken broth, water, chicken pieces, carrots, celery, onion, garlic, thyme, sage, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
  • In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden brown, stirring constantly.
  • Gradually whisk in 1/2 cup of milk until smooth. Cook and stir until thick, about 2-3 minutes.
  • Stir the milk mixture into the pot with the chicken and vegetables. Simmer uncovered for 10 minutes, stirring occasionally.
  • Meanwhile, prepare the dumplings: In a mixing bowl, combine flour, baking powder, and salt. Stir in milk just until moistened.
  • Drop the dumpling mixture by rounded spoonfuls onto the chicken mixture.Cover and simmer for 15-20 minutes, or until a toothpick inserted into a dumpling comes out clean.
  • Discard bay leaves. Adjust seasoning with salt and pepper if needed.
