Chicken Cacciatore
Chicken Cacciatore is an Italian-style dish made with bone-in, skin-on chicken thighs that are simmered in a tomato-based sauce with vegetables such as onions, bell peppers, and mushrooms.   • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 cup bell peppers, diced
  • 1 cup mushrooms, sliced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 tbsp chopped fresh parsley
Directions
  • Season the chicken with salt and pepper.
  • In a large skillet or ovenproof pan, heat olive oil over medium-high heat. Sear the chicken thighs on both sides until golden brown. Remove and set aside.
  • In the same pan, add diced onion and minced garlic. Sauté until the onion is translucent.
  • Pour in white wine to deglaze the pan, scraping up any browned bits from the bottom.
  • Stir in diced tomatoes and chicken broth. Return the seared chicken thighs to the pan.
  • Add bell peppers, mushrooms, rosemary, thyme, and a bay leaf to the pan. Stir well.
  • Bring the liquid to a simmer. Cover the pan and let it braise on low heat for 25-30 minutes or until the chicken is cooked through.
  • Ensure the chicken thighs reach an internal temperature of 165°F (74°C).
  • Discard the bay leaf and sprigs of herbs. Garnish the dish with chopped fresh parsley.
