Red-wine braised beef brisket is a dish made by slow-cooking beef brisket in a mixture of red wine, beef broth, and vegetables. The beef is seared in a pot and then braised with the other ingredients until it is tender and falls apart easily.   • 2 lbs beef brisket
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp paprika
Directions
  • Preheat your oven to 325°F (163°C).
  • Season the brisket generously with salt and pepper on all sides.
  • In a large ovenproof pot, heat olive oil over medium-high heat. Sear the brisket on all sides until browned. Remove the brisket and set it aside.
  • In the same pot, add diced onion and minced garlic. Sauté until the onion is softened.
  • Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom.
  • Return the seared brisket to the pot. Add beef broth, fresh rosemary, fresh thyme, bay leaves, tomato paste, brown sugar, and paprika. Stir well.
  • Bring the liquid to a simmer on the stovetop.
  • Cover the pot and transfer it to the preheated oven. Braise for 3 to 3.5 hours or until the brisket is fork-tender.
  • Adjust the seasoning if necessary. Remove and discard the rosemary sprigs, thyme sprigs, and bay leaves.
  • Allow the brisket to rest for a few minutes before slicing it against the grain. Serve the braised beef brisket drizzled with the rich red wine sauce.
