  • 8 medium flour tortillas
  • 2 cups cooked beef, shredded or thinly sliced
  • 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • 1 onion, finely chopped
  • 1 bell pepper, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: salsa, sour cream, guac
Directions
  • In a skillet, heat olive oil over medium heat.
  • Sauté onion and bell pepper until softened.
  • Add cooked beef to the skillet and cook until heated through. Season with salt and pepper.
  • Heat a large skillet or griddle over medium heat.
  • Place a tortilla on the skillet and sprinkle with a layer of shredded cheese.
  • Spoon some of the beef and vegetable mixture over half of the tortilla.
  • Fold the tortilla over the filling to create a half-moon shape.
  • Press down gently with a spatula and cook for 2-3 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve hot with your favorite toppings.
