Marinade
  • 1/2 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons mirin (or rice wine)
  • 1 tablespoon red pepper flakes
Tacos
  • 1½ pounds thin sliced beef
  • 8 small flour tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Thinly sliced green onions
  • Sesame seeds for garnish
  • Spicy mayo or sriracha mayo
Directions
  • In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, mirin, and pepper flakes. Add the thinly sliced beef to the marinade, ensuring each piece is well coated.
  • Marinate for at least 30 minutes, or ideally, refrigerate for 2-4 hours for more flavor.
  • Heat a large skillet or grill pan over medium-high heat.
  • Cook the beef for 2-3 minutes per side or until cooked through with a caramelized exterior.
  • While the beef is cooking, prepare your taco toppings. Shred the lettuce, dice the tomatoes, and slice the green onions.
  • Warm the tortillas in a dry skillet or in the oven according to the package instructions.
  • Place a few slices of the cooked bulgogi beef on each tortilla.
  • Top with shredded lettuce, diced tomatoes, and sliced green onions.
  • Drizzle each taco with spicy mayo or sriracha mayo.
  • Sprinkle sesame seeds over the top for added flavor.
